I've fallen down the ube-matcha latte rabbit hole and want to make them at home instead of paying $8 a pop. I already have a matcha whisk from my plain-matcha phase. What do I actually need for the ube part — ube extract, ube powder, or one of those syrups? And does the order matter (ube first, then matcha, then milk)? Trying not to buy five products to learn I only needed two.

    I'll be the lazy vote: Monin ube syrup. Yeah it's sweeter than extract, but for a beginner the syrup is foolproof — one pump, done, no measuring. Checkable: Monin prints the pump output (1/4 oz per pump) so your drink is the same every time. Once you're making them weekly, THEN switch to extract like the comment above says. Don't optimize the thing before you know you like the thing lol.

    Go with ube extract over powder. Powder is mostly starch and mutes the color unless you use a lot; extract gives you the purple with a teaspoon. Checkable: compare ingredient lists — most ube powders list 'ube, maltodextrin' while extract is concentrated flavor. For order: ube + milk first, whisked matcha poured over — the density difference gives you the layer. One $12 bottle of extract lasts ~30 drinks. That's $0.40/drink vs $8 at a café.
